Ingredients:
- 2 kg fresh fish as desired
- 1 tsp salt
- 1/2 cup flour
- 3 tablespoons olive oil
- 1 cup cilantro
- 4 garlic cloves - crushed
- 1/2 cup walnuts - chopped
- 1/2 tsp ground cumin
- 1/4 tsp seven spices
- 1/4 tsp paprika
- 1/2 cup Lemon juice
- 1 hot chili pepper as desired
- enough vegetable oil for deep frying
Directions:
- Clean fish and wash thoroughly. Strain and pat dry from excess water using some kitchen paper towels.
- Salt the fish & set aside for a few minutes so as salt can seep into the fish. Coat the fish with flour so it doesn’t stick or crumble during frying
- In a deep pot heat enough vegetable oil & deep fry the fish until it's fully cooked then set aside.
- In a large saute pan add 3 tbsp of olive oil & saute the cilantro, garlic until aromatic and golden. Add the chili pepper, lemon juice & spices, stirring all ingredients & bring to a boil
- Finally add the fish and walnuts simmering for 20 minutes over low heat.
- transfer the fish onto your choice of serving dish and garnish as desired before serving
