*Ingredients:
2 kg gundelia
500g lamb meat
2 tablespoons ghee
½ teaspoon seven spices
½ teaspoon salt
* Method of preparation
-- clean gundelia well from thorns
-- soak a little with salted water ,wash several times with water, until water becomes clear
-- in a suitable pot ,add ghee, then meat ,stir well together
-- add gundelia,salt and spices , toss all together from time to time. Don’t mix with a spoon.
-- add a little amount of water over the gundelia
-- cover the pot and leave on low heat , tossing continuously
until cooked
-- Gundelia /Akoub is served with, rice with vermicelli ,and cooked yogurt (labneyeh)
