Ingredients:
- 600g Arugula
- 1 cup cherry tomatoes
- 200g parmesan cheese
- 100g walnuts
- 3 tbsp balsamic vinegar
- 2 tbsp mayonnaise
- 1 tbsp honey
- 1/2 tsp mustard
- 2 tbsp lemon juice
- 5 tbsp olive oil
- 1/4 tsp white pepper
- 1/4 tsp salt
- 1 tbsp parmesan for garnish
Directions:
- Start by preparing the salad dressing in a food processor add the balsamic vinegar, mayonnaise, honey, mustard, lemon juice, pepper & salt mixing well, gradually adding the olive oil until a smooth dressing has been achieved.
- Pour the dressing in a side dish and set aside.
- To make the parmesan serving bowl, start by adding the 200g of Shredded parmesan cheese in a non-stick pan on low heat until the cheese has melted completely and starts to crisp.
-Remove from heat and set aside for 1 or 2 mins until it’s slightly warm and safe to handle. Remove from the pan & set over a bowl, placed upside down so the melted parmesan can cool down while taking the shape of the bowl.
- Finally remove the cheese from the bowl slowly and arrange the arugula inside the cheese bowl & garnish with the walnuts & cherry tomatoes.
-Sprinkle with 1 tbsp of parmesan cheese on top, serve next to the salad dressing.
